These cheesy ham and egg muffins recipe idea with bell peppers, onion are so tasty and simple to bake ahead or serve warm out of the oven for a special breakfast. A Mother’s Day or Fathers Day breakfast or brunch to serve with tea or coffee in bed. Filled with any fillings you would like but these are the ham and peppers and a little onion and of course cheddar cheese. Oven Baked in muffin pans. This is what makes the ingredients keep together and servable. Keeps well in the fridge sealed for at least three days. Warm up and serve. Once you have all your ingredients chopped and cup. Mix the egg and milk with the spices and fill the greased muffin pans with the liquid.

Ingredients

Scale
  1. 10 Large Eggs
  2. 1/3 cup of milk
  3. 1/2 teaspoon of garlic powder
  4. 1/4 teaspoon of onion powder
  5. salt and pepper
  6. 1Teaspoon of chutney (optional) or hot sauce.
  7. 1 cup of diced ham
  8. 1 cup of grated cheddar cheese
  9. 1 cup of diced red and green bell peppers and red onion.

Instructions

  1. Preheat oven to 350 Deg. F (175 Deg C.)
  2. Grease or spray and cook your muffin pans.
  3. In a large bowl mix with a hand mixer your eggs milk and all your spices and sauce.
  4. Fill each muffin pan with this egg milk mixture equally.
  5. Add on top of the muffin mix your ham and peppers and cheese evenly as well. They will sink a little in the mixture.
  6. Bake for about 25 minutes until browned and cooked. (test )
  7. Serve warm.
  8. (allow to cool and store in a sealed bag or container for a few days.) Freezes well for one month.
