Crammed Savory Breakfast Crepes.
A simple use of plenty eggs, but not to much. Very filling crepe, with many types of fillings. We used four times this recipe for a family of 8.
With a mixing bowl add the eggs, milk and sugar and oil. Mix thoroughly until all is smooth. Then add in the water and flour and salt. Mix that until all is smooth and has a good consistency. Not a thick mixture as you would need to pour the mixture out into a pan to cook, like a pancake.

A good consistency is easier to fold over or wrap with your ingredients inside. Any filling can be used, as we had these for breakfast or a light supper.

With some tomato’s from the veggie garden and avocados. We chopped them all up with some red beans and grated mozzarella cheese.

Filled the crepes with this savory filling and added some mayonnaise or tomato sauce. Topped up with some cheese.
Improvise with what you have in the kitchen. This recipe is very filling but very tasty.

Crammed Savory Breakfast Crepes. A use for those excess eggs make crepes filled with avocado and tomato and beans topped with cheese.

- Method: pan fry
Ingredients
1 cup of flour
2 eggs
1/2 cup of milk
1/2 cup of water
1/4 tsp of salt
2 Tbsp. of oil or butter
Filling
Chopped avocado
Chopped tomato
Chopped lettuce
Beans with sauce.
Instructions
Obtain a good pan to fry the crepes in. Non stick.
Use a little olive oil, in the pan and heat it up.
Mix all the wet ingredients together until smooth.
Then add the dry ingredients mixing continually. Make sure the mixture is smooth and has a good working consistency. For pouring in the pan and to make a lighter crepe.
Fry until done and flip to the other side.
Place in a plate and add the fillings you desire.

Fold over to make a roll or make quarters out of the crepe. (totally your preference)
Serve with more cheese on top and some salad.
Notes
Crepes may be filled with anything, it totally depends on when you serving this meal. Savory is always a winner for vegetarians.
