Ingredients

  1. 2 cups of rolled oats (jungle oats)
  2. 1 cup of flour
  3. 1 cup of brown sugar
  4. 1 cup of desiccated coconut
  5. 1/2 cup of butter
  6. 1/2 teaspoon of bicarb of soda
  7. 2 tablespoons of Honey. (or illovo syrup optional)
  8. 1/4 teaspoon of salt

Instructions

  1. Preheat Oven to 180 Deg. C (350 Deg. F)
  2. Grease baking tray or roasting pan or line with wax proof paper or liner.
  3. Melt the butter in a bowl.
  4. In a larger bowl mix the dry ingredient such as oats, flour, sugar, coconut, bicarb soda.
  5. Add the melted butter and the honey and mix all the ingredients together until well mixed.
  6. Press and level oat this oat mixture into a baking pan with some sides. (or roasting pan)
  7. Place in the preheated oven and bake until brown on top.  For about 30 minutes
  8. When cooked take out and place on a cooler rack and cut the oat crunchies in squares while it is warm. Leaving the crunchies to cool before taking out of the pan. As they will set harder then this will be difficult.
  9. When cool place in containers and keep sealed for at least 3 days. They do last longer if wrapped with foil wrap. Great snacks to take on journeys or made in quantity.

Notes

  • These oat crunchies may be made into biscuits as well.
  • Use some illovo syrup as a alternative to honey. maple syrup is to runny, its not the same consistency.
