Mixing your wet ingredient first well and keeping the dry ingredients separate. Before you add them together, as this way you will not over mix the mixture. Adding Greek yogurt or buttermilk can also make the recipe a lot more moister.

Olive oil make a lighter and fluffier muffin, where as butter make them much tastier.

Dice your pears. Mix all the dry ingredients through a sieve. (flour, baking powder, cinnamon powder)Add the dry ingredients to the diced pears and mix well.

Pour into the muffin pans up to three quarter full to allow for rising.

Ingredients
- 2 cups flour and 1 1/2 teaspoon of baking powder, sifted
- 1/2 cup Brown sugar
- 2tsps ground Cinnamon powder
- 3 or 4 Ripe pears. peeled, cored and diced
- 2/3 cup Milk
- 1/4 cup Olive oil
- 1 large Egg
Instructions
- Preheat the oven to 180 Deg. C (356 Deg. F)
- Grease or use spray and cook on muffins pans.
- Dice your pears,
- Mix all the dry ingredients through a sieve. (flour, baking powder, cinnamon powder)Add the dry ingredients to the diced pears and mix well.
- Mix the wet ingredients, (sugar, milk, egg and olive oil).
- Mix all the ingredients together with a spoon and make sure there is no dry ingredients.
- Pour into the muffin pans up to three quarter full to allow for rising.
- Mix a small mixture of cinnamon and brown sugar and sprinkle on the tops of the muffins.
- Bake in the oven for at least 20 – 25 minutes until tested cooked with a knife.
- Take them out and let cool on a cooler rack for 2 minutes. (they will break if turned out to soon) then empty them out on the rack to cool further
- enjoy for breakfast or snack or even a dessert.
