Ingredients
- bacon, chopped
- onion, chopped
- puff pastry
- cheddar cheese
- eggs
- salt and pepper
- garlic powder

How To
Place the onions and bacon bits into a saucepan with a little oil on the stove over medium heat. Cook until all are tender. Don’t overcook them as they must still bake in the oven.–> get bacon jam to add for a difference.
Grease a baking sheet with some wax paper and preheat the oven.
Roll out the sheet of puff pastry and cut into about 6 rectangles or as much as your pastry sheet will allow you.
Once the bacon mixture has slightly cooled, place a tablespoonful onto each puff pastry slice. Spread the bacon to create a well in the center.
Place some shredded cheese inside each well.
Fold the edges of each puff pastry to create a border so the egg doesn’t come out when cracked inside.
Lastly crack and egg in the middle of the bacon and onion ring formed on the puff pastry squares.
Mix the salt, pepper and garlic powder and sprinkle over each egg.
Bake in the oven for 10 minutes or until lightly browned and the egg is cooked to your liking. (Some like sunny side up or cooked hard)
Remove from the oven and sprinkle with some chopped parsley for garnish.
These make great special Birthday or Valentines Day breakfasts. Prepare ingredients and pastry before hand and bake the day you need them. Best eaten warm.

Ingredients
- 5 pieces of bacon, chopped
- 1 small onion, chopped
- 1 sheet of puff pastry
- 1 cup shredded cheddar cheese
- 5 eggs
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ teaspoon garlic powder
- Parsley
Instructions
1. Preheat the oven to 390 degrees Fahrenheit. Prepare a baking sheet with parchment paper. Set aside.
2. Place the onions and bacon bits into a saucepan with a little oil on the stove over medium heat.
3. Let these cook, stirring every few minutes, until browned. This will take 6-8 minutes. Remove from the heat when done and let cool.
4. Unravel the puff pastry and cut into 6 pieces. Place on the parchment paper about 2 inches apart from each other.
5. Once the bacon mixture has slightly cooled, place a tablespoonful onto each puff pastry slice. Spread the bacon to create a well in the center.
6. Place some shredded cheese inside each well. Fold the edges of each puff pastry to create a border so the egg doesn’t come out when cracked inside.
7. Lastly, crack each egg into the center of each pastry on top of the cheese. Mix the salt, pepper and garlic powder and sprinkle over each egg.
8. Bake in the oven for 10 minutes or until lightly browned and the egg is cooked to your liking. (Some like sunny side up or cooked hard)
9. Remove from the oven and sprinkle with some chopped parsley for garnish.
