Oven Grilled Stuffed Chicken Breasts
An easy recipe to cook on the oven grill for a meal for during the week or on weekends for family. Lunch or dinner with asparagus for sides. Seasoned and stuffed with mozzarella cheese slices and sun dried tomato in sliced chicken breasts. This recipe idea is suitable for the open braai or barbecue grilling as well. Alternate the side dishes of vegetables or salads to suit your meal. This oven grilled stuffed chicken breasts are flavorful and tender and very simple to make.
How do you grill chicken breasts without drying them out?
To grill the chicken breasts on the oven grill, is tricky as you can not set the temperature of the grill. Therefore I would baste the chicken with some butter or olive oil when you turn the chicken to grill the other side. But for those that can regulate the grill temperature make it at a medium heat to not to dry out the chicken.
How do you know when grilled chicken breast is done?
You can check the internal temperature of the chicken with an iGrill meat probe. The temperature should read 165 Deg. F. for a juicy tender piece of chicken. But if you do not have the probe then go by brownness and touch to see if it is not hard. The time it takes to grill a chicken breast for a large thicker breast that is stuffed should be about 8-10 minutes per side. If the chicken breast is smaller and thinner the grill each side for 4-5 minutes. Leave to rest to cook finished before serving. Apple a dressing such as this recipe of reduced balsamic vinegar.

Balsamic vinegar to reduce for a dressing once the chicken breasts are grilled before you serve.
How To
Firstly rub some olive oil and salt and pepper your chicken boneless breasts. Put aside.
Place the balsamic vinegar in the pan and heat up on a medium heat. Bring this mixture to reduce to 1/3 of a cup from the cup that was required. Should be reduced to a syrup liquid. Place aside and seal it in a bowl. This will be needed for a dressing when you serve the grilled stuffed chicken.
Warm up the oven grill. Have the grilling pan ready to place the chicken breast on to grill.
Gently with a sharp knife cut the chicken breast three quarters of the way through. (but not all the way through) Open them up and salt and pepper the inside as well.
Place the sliced mozzarella cheese and the oiled softer sun dried tomatoes inside the sliced chicken pieces. Keep closed with a skewer so that the stuffing does not fall out. Cut the skewer so it just sticks out of the chicken. To prevent it burning while grilling in the oven.
Place the stuffed chicken on the grilling pan under the heated grill in the oven. Leave to grill for about 8-10 minutes until brown. (this time will of course depend on the thickness and sizes of the chicken breasts)
Turn the stuffed chicken over for it to grill on the other side. Also about 8-10 minutes. Some cheese will melt and drip out, but that is fine.
In the meantime sauté the asparagus in some butter for a few minutes until tender. Take off and place in serving dishes.
Place the grilled chicken on serving dishes and serve with the reduced balsamic vinegar as a dressing. Add your asparagus as a side dish and enjoy.
Serve with any vegetables you prefer and some potatoes for a meal for the family, whether its a lunch or dinner.
PS: this grilled chicken breasts will go well when grilled on the open coals of a fire for a braai or a barbecue.
