  2. 1 small onion peeled and chopped.
  3. 4 eggs
  4. 1 cup of milk
  5. 1/2 cup of mushrooms
  6. 1/2 cup of corn
  7. 3 Tablespoons of flour or cornstarch (or maizena)
  8. Salt and pepper to taste
  9. 1 teaspoon of garlic powder
  10. 1 teaspoon of mushroom seasoning.

  1. Preheat your oven to 180 deg. C (350 deg. F)
  2. Add your chopped onions to the large warm frying pan that has olive oil in. Fry and stir in your mushrooms and corn. Once the onions are half caramalized add in your corned beef and break it up with a fork or spatula, to resemble ground meat.
  3. Fry for a little until all in incorporated and onion and mushrooms are done.
  4. Grease your pie dish that is about9 inches in diameter.
  5. In a small bowl add your eggs, milk and spices. Whisk or mix well with a for or a whisk.
  6. Add your fried ingredients, that being the corned beef and onion mixture to the pie dish. Level it out evenly and pour over the corned beef mixture your egg mix. Spread the egg mix evenly over the mixture.
  7. Grate your cheese and sprinkle over the top, sprinkle some parsley flakes over the top.
  8. Place in the oven and bake at 180 deg. for at least 30 minutes until the mixture is set and cooked. Cheese will be melted. Stick a fork or knife in to see that there is no more liquid to be set before taking it out of the oven.
  9. Place on a cooling rack to lightly cool. As you would be serving this warm for an easy weeknight meal.
  10. Delicious for brunch or lunch or breakfast for family.
  11. PS: for a larger family make double the ingredients.
