This easy one pan meal, that is so simple to make, sausage and veggies with potato, makes the perfect meal with side dishes and gravy for a week night dinner or supper. If you need to bake a dish in the oven with more ingredients that will make fat or juice use a baking pan with higher sides. Even add the ingredients to a casserole dish so you can be certain that the liquid will not spill over in the oven. Yes the sheet pan edges are lower than the baking tray or roasting pan.

Ingredients

  1. package kielbasa (Or your preferred type of sausage or boerewors)
  2. diced sweet potatoes (2 medium sweet potatoes)
  3. Brussel sprouts, halved
  4. olive oil, divided
  5. balsamic vinegar
  6. fresh thyme
  7. Salt and pepper to taste

How To

Spray a baking sheet with cooking spray and set aside. Preheat the oven.

Place diced sweet potatoes in a small bowl.

Drizzle with 1 Tbsp olive oil, fresh minced thyme and salt and pepper to taste. Toss to coat.

Pour out onto one side of your sheet pan.

Place halved brussel sprouts into a small bowl. Drizzle with 1 Tbsp olive oil, balsamic vinegar and salt and pepper to taste. Toss to coat. Pour onto the other side of your baking sheet.

Bake for 30 minutes.

Meanwhile, slice the sausage into smaller pieces. Halfway through the baking time (15 minutes), remove the sheet pan from the oven and place the sausage on top of the veggies.

Continue to bake for another 15 minutes.

  1. 1 x 14 oz (400 g) package kielbasa (Or your preferred type of sausage)

Instructions

2.      Place diced sweet potatoes in a small bowl. Drizzle with 1 Tbsp olive oil, fresh minced thyme and salt and pepper to taste. Toss to coat. Pour out onto one side of your sheet pan.

3.      Place halved brussel sprouts into a small bowl. Drizzle with 1 Tbsp olive oil, balsamic vinegar and salt and pepper to taste. Toss to coat. Pour onto the other side of your baking sheet.

4.      Bake for 30 minutes.

5.      Meanwhile, slice the sausage into smaller pieces. Halfway through the baking time (15 minutes), remove the sheet pan from the oven and place the sausage on top of the veggies. Continue to bake for another 15 minutes.

6.      Remove the pan, serve and enjoy!
