How To make a Summer Fruit Berry Salad with Tapioca Pearls

  • Peel the watermelon, cut into edible pieces. Wash and clean the strawberries, blueberries, and blackberries. Slice the ripe fresh peach into thin slices.
  • Cook on the stove top the boba pearls with brown sugar to get the dark color. (as per instructions on the package) leave to cool with a little syrup. As they will stick together.
  • Mix your dressing until all is dissolved. 
  • In a large bowl mix all the fruit together and leave some tapioca for the topping. Serve in some bowls for dessert. Sprinkle more tapioca pearls on top for an effect.
  • Drizzle each bowl with the honey, lemon juice. Dress the bowl with a fresh sprig of mint and serve. Eat this salad within four hours.
