A mini Lemon Curd and Blueberry Tartlets Recipe. Oven baked dessert with shortbread crusts, filled with tangy lemon curd and blueberries.

Ingredients

Scale
  1. 1/2 cup of unsalted butter
  2. 1/4 cup of sugar
  3. 1 cup of flour
  4. 1/4 teaspoon of salt (if using unsalted butter)
  5. 1/2 teaspoon of vanilla essence
  6. 1 cup of premade –> lemon curd (obtain recipe here)
  7. Bake or purchase the pie shell. Or make this recipe –> Easy Shortbread Crust Pastry

Instructions

  1. Mix together the soft butter and sugar until creamy.
  2. Then add the flour and the vanilla essence and mix the dough well and then wrap up in plastic and leave in fridge for 30 minutes. Or make this recipe –>  (Easy Shortbread Crust Pastry)
  3. Preheat the oven to 150 Deg.C (300 Deg.F)
  4. Roll out the shortbread dough and cut to the size of your tartlet pans. Press into the greased tartlet pans.
  5. Bake these crust on baking pan sheet for about 10 – 15 minutes until you see they slightly golden.
  6. Let them cool before removing from the tartlet pans. Then fill them with the lemon curd and add the blueberries on top. Or a small dollop of cream.
