Ingredients

  1. 1 Cup flour
  2. 2 Tsp baking powder
  3. ½ Tsp cinnamon
  4. ¼ Tsp nutmeg
  5. 1 Egg
  6. 2 Tbsp olive oil
  7. 3 Tbsp maple syrup
  8. 1 Cup milk
  9. Butter for the pan or griddle

Instructions

  1. In a bowl whisk together the flour, baking powder, cinnamon and nutmeg.
  2. Add the rest of the ingredients and stir until everything is just incorporated. Let the batter rest for 5 minutes.
  3. Meanwhile heat a pan or griddle over medium heat. Grease with the butter. Ladle around ¼ Cup pancake batter into the hot pan and cook for 1 ½ minutes or until small bubbles appear on top. With the help of a spatula flip the pancake and cook for 40 seconds more or until done.

Notes

  • You can also use honey or agave syrup instead of maple syrup. Same with the oil, feel free to use coconut oil or melted butter
  • These pancakes are slightly sweet so you don’t need to serve them with a lot of toppings.
