Ingredients include

6 Tblsp of organic honey
- 4 Tblsp of olive oil
- 1/2 cup of dijon mustard
- 3/4 red onion or shallots
- 4 Tablsp of chopped fresh rosemary or 2 Tblsp of dried rosemary.
- 1 teaspoon each of grounded black pepper and salt
- 2 Tblsp of lemon juice

Instructions

  1. Debone the chicken thighs by cutting along each side of the bone and carefully removing it, leaving the thigh meat in one piece. Flatten each thigh slightly.
  2. Prepare the honey mustard marinade. Finely chop the onion and add it to a bowl with the olive oil, honey, mustard, rosemary, lemon juice, salt, and black pepper. Stir well until everything is thoroughly combined.
  3. Place a spoonful of the marinade into a container large enough to hold the four deboned chicken thighs. Lay the chicken thighs flat in the container, then pour the remaining marinade over the top, making sure each piece is well coated. Cover and refrigerate for 2–4 hours, or overnight for the best flavor. Before grilling, remove the chicken from the refrigerator and allow it to come to room temperature for about 20–30 minutes.
  4. When the coals are hot and ready, lay flat each chicken thigh and secure it with a single bamboo skewer through the center. This helps the chicken hold its shape and makes it easier to turn while grilling.
  5. Place the chicken over the hot coals and cook for 5–6 minutes on the first side, or until beautifully caramelized with light grill marks. Turn the chicken over, baste with the remaining marinade, and grill for another 5–6 minutes, or until golden brown and cooked through. The internal temperature should reach 160 deg. F, (60 deg. C)
  6. Serve the chicken straight from the skewer for an easy, casual barbecue or braai meal.
  7. Enjoy it with fresh salads, grilled vegetables, potatoes, warm bread, or your favorite barbecue side dishes.
