Homemade Corn and Black Bean Tortillas. This homemade Vegetarian or Vegan filled tortilla can also be a versatile meal filled with chicken.

Ingredients

  1. 1 x tin of Black Beans or brown beans
  2. 1 x tin of corn (or sweetcorn)
  3. Two medium tomatoes (sliced or chopped)
  4. 1 Red onion (chopped)
  5. 1 x red or yellow bell peppers (sliced or chopped)
  6. 1 x ripe avocado pear. (chopped pieces)
  7. salt and pepper
  8. 10 Pack of tortillas (or make your own)
  9. Cup full of shredded cooked chicken (from left overs)
  10. your choice of sauce (tomato, mayonnaise sauce)
  11. grated cheese

Instructions

  1. Warm up your ingredients as well as the tortillas. Reheat tortillas by wrapping a stack in paper towels and reheating in the microwave. You can also wrap them in foil and reheat them in the oven.
  2. Make the different bowls of your mixes. ie; Beans and corn, avocado and tomato and onion, chicken. Cheese. So the family can help themselves and fill in what they prefer to eat.
  3. Fill the tortilla with your own choice of ingredients, spice and sauce them.
  4. You can roll the tortillas up like a pancake or open up and have the round tortilla filled with portions of 4 (quarters.) Slit one piece to the center of the tortilla circle and fold each quarter filled with ingredients over the other. End up a triangle. Easier to hole and eat.

Notes

  • Make this a versatile family meal, add any other ingredients you prefer. They are totally freezable as well.
