Ingredients

  1. 1 sweet potato, peeled and cut into small pieces
  2. 2 tbsp. olive oil
  3. 15 oz chickpeas, rinsed and drained
  4. 1 onion, chopped
  5. 1 red bell pepper, chopped
  6. 1 green bell pepper, chopped
  7. 1/2 tsp paprika
  8. 1 tsp thyme, dried
  9. 5 oz spinach
  10. 6 eggs
  11. 1 tsp of salt and pepper

Instructions

  1. Preheat the oven to 400F
  2. Place the sweet potato in a single layer on a plate, sprinkle with water, and microwave for 2-3 minutes, until soft
  3. In an oven-safe skillet, heat the oil over medium-high heat
  4. Add the sweet potato in a single layer and cook for 3-4 minutes without stirring
  5. Stir in the onion, peppers, paprika, and thyme
  6. Cook for about 7-8 minutes, stirring occasionally, until the vegetables soften
  7. Slowly add the spinach, stirring until it wilts between batches
  8. Remove from the heat and make an indent in 6 places
  9. Crack the eggs into the indents
  10. Place the entire pan in the oven and bake until the eggs are done to your preference:
  11. 5-7 minutes  runny yolk7-10 minutes = semi-firm yolk10-15 minutes = hard yolk
  12. Sprinkle with salt and pepper to season and serve immediately.
