Ingredients

  1. 3 ripe Peaches
  2. 3/4 cup feta cheese
  3. 1 cup pomegranate seeds
  4. 1 bag leafy spinach leaves
  5. 1 cup almond nuts

DRESSING

  1. 3 Tablespoon red wine vinegar
  2. 2 Tablespoons of virgin olive oil
  3. 1 teaspoon of dijon mustard
  4. 2 Tablespoons of pure honey
  5. 1 lemon- juice and zest
  6. salt and black ground pepper

Instructions

  1. Clean all the ingredients, dry the spinach leaves. Take out the pomegranate seeds, cut up the feta cheese. Slice the fresh peaches and remove pips, leave the skin on. Measure all ingredients to put together the salad.
  2. Make the dressing with the all the ingredients mentioned. Shake and mix them well. Keep in a salad dressing container for the table when salad is served. (you could make double)
  3. With the sliced peaches (skin on) Heat up the cast iron stove top grill and lightly grill the freshly cut peaches, just a minute or two each side.
  4. Toss the spinach leaves on a rectangular plate and sprinkle the feta and the grilled peaches on top equally. Add some almond nuts to. Add the sweet pomegranate seeds on top and drizzle a little dressing over. Keep some dressing aside for it to be served with the side dish salad on the table.
  5. Serve as a side dish spring salad or a breakfast

Notes

  • any other fruits may be added, some pears, or tin yellow peaches, apples and so on.
