Ingredients

Basic muffin mix.

  1. 2 Cups flour
  2. 1/2 Cup of brown sugar
  3. 1 tsp of baking powder
  4. 1/2 tsp of salt
  5. 1 large egg
  6. 3/4 Cup of milk
  7. 1/3 Cup of oil
  8. 1 tsp of vanilla essence

Add To Muffins 

1 Cup of fresh raspberries

Instructions

  1. Set oven at 185 Deg.C  and Grease the muffin pans.
  2. With a hand or standing mixer.
  3. Mix well the wet ingredients, such as egg, milk, oil, sugar and vanilla essence.
  4. Then add the four and baking powder, mix very well.
  5. Fold in the raspberries into the mixture.
  6. Spoon the mixture into the muffin pans and bake.
  7. Bake for 20 min. Test with skewer if done.
  8. Cool on a cooling rack and dust with icing or castor sugar.
  9. Serve up on a plate.

Notes

Add any choice of filling for this basic muffin mix.
