Instructions
Our dough is in the form of two rectangles. Roll out the dough layers one by one in the same direction to form a rectangle measuring 20 x 15 inches. Sprinkle them with sugar, cinnamon, and brown sugar.
Visually divide the dough layer in half. Roll both long edges toward the center, making rolls so they meet in the middle. The width of one roll should be wider so the pastry resembles a butterfly.
Then fold the dough in half, as if closing a book. Using a sharp knife, cut into 6 equal pieces. Shape the second layer into shapes in the same way.
Make slits, but not quite all the way through, and gently open the “wings” with your fingers. Press the center with a skewer. During baking, the dough will rise and form beautiful golden butterflies with crispy caramelized layers.
Brush each cookie with beaten egg and place on a parchment-lined baking sheet. We baked 6 cookies on 2 baking sheets, each with 6. Keep in mind that the butterflies will expand during baking. Bake the butterfly palmiers in a preheated oven at 375°F (190°C) for about 20-25 minutes, until golden, crisp, and caramelized around the edges. Insert pretzel tips and attach sprinkles with a dab of honey.
Butterfly palmiers are best served slightly warm with coffee, tea, lemonade, or berry iced tea. Enjoy!
