Ingredients

  1. 1 round Brie cheese (4 ounces)
  2. 7 ounces’ cream cheese
  3. 3 tbsp. shelled pistachios
  4. 3 tbsp. dried cranberries
  5. 3-4 tsp honey
  6. a splash of honeycomb for garnish
  7. dried figs and rosemary, for serving

Instructions

  1. Remove the cream cheese ahead of time. It should be at room temperature. Finely chop the pistachios and dried cranberries with a sharp knife. Cut the figs into quarters.
  2. Place the cream cheese in a bowl. Stir in the prepared pistachios and cranberries. Stir the ingredients with a silicone spatula until smooth. The cake filling is ready.
  3. Cut the Brie in half and place the soft side up on a board.
  4. Brush each half with honey. Spoon the filling over the honey. 5. Press the two halves together to form a cake. Smooth the top with a rubber spatula. Transfer to a serving plate. Decorate the brie cake with fig towers, rosemary, and honeycomb.
  5. Serve with crackers, salty biscuits, or crispbread. Grissini also work well—they add elegance and are easy to serve.
  6. For a more interesting presentation, add a plate of fresh fruit. Grapes and slices of pear or apple create a refreshing contrast and highlight the creamy flavor of the cheese. For a sweeter note, serve a drizzle of honey or fruit jam. Sparkling wines are the best drinks. For a non-alcoholic alternative, try citrus-infused iced tea or homemade lemonade.
