Ingredients

  1. 500 g of ground beef mince meat
  2. 1 onion chopped and peeled
  3. 1/2 teaspoon of garlic flakes or powder
  4. 2 Tablespoons of olive oil
  5. 3/4 cups of water
  6. 2 potatoes peeled and cubed in small pieces.
  7. 1 cup of grated or chopped carrots
  8. 1/4 cup of green bell peppers chopped.
  9. 400 g of tin of tomatoes (or 2 cups of chutney, is best)
  10. 1 Tablespoon of apple cider vinegar or white vinegar
  11. 1.5 Tablespoons of curry powder or masala
  12. 1 teaspoon of ground turmeric
  13. 1 teaspoon of, Canadian blend, steak seasoning to add that tang.
  14. 1/2 teaspoon of dried herbs (coriander, ginger, parsley)
  15. 1 teaspoon of salt and ground black pepper
  16. 1 1/2 Tablespoons of peach jam or apricot jam
  17. 1 cup of white or brown rice. ( 2 cups of water and salt)

Instructions

  1. Heat up a pan and add some olive oil to sauté the onions until tender and start to brown
  2. Add the curry powder and turmeric, mix and stir to combine and allow to simmer for about 2-3 minutes with lid on the pan.
  3. Open the tomato tin and add to this mixture, also add the mixed herbs of salt and pepper and garlic, as well as some steak seasoning,(Canadian blend) and stir together.
  4. Include the ground or minced beef and mix these together and allow to simmer, breaking up the meat and leave to cook for a few minutes.
  5. While you simmer the ground beef, cook the rice. Add a cup of soaked clean rice to a pot and add 2 cups of water and some salt and bring to boil. Turn down the heat and simmer the rice with the lid on until all the liquid has been soaked up. This should take about 20 minutes.
  6. Pour in the water and apple cider vinegar and the jam and mix this together with the meat.
  7. Add the grated carrots and the potato pieces or cubes. Then stir and mix them into this meat mixture.
  8. Place the lid on the pan and allow to simmer for a while until the carrots and the potato cubes are tender and cooked, and this should take about 20-30 minutes.
  9. Serve with rice and chopped tomatoes and bananas to combat the flavors of the curry.

Notes

  • instead of tomato in a can, use chutney, for a better flavor.
  • the curry is a bit mild, use garam masala instead or add more curry.
  • Added some green bell peppers for color and added veggies
