Ingredients

  1. 1 egg (large)
  2. 1 small sweet potato or 1/2 cup sweet potato puree (baked or boiled)
  3. 4 tbsp. whole wheat or regular flour
  4. 1/4 cup milk (cow or plant)
  5. pinch of salt
  6. butter (for frying, about 1 tbsp.)

Instructions

  1. Peel the sweet potato, cut into cubes and boil in a saucepan or steam. Mash with a fork or masher. Cool the puree a little.
  2. Add the egg and milk to the sweet potato puree. Lightly beat the mixture with a fork.
  3. Add the flour and mix until smooth. The dough should be thick but runny. If it is too thick, add a little more milk.
  4. Heat the pan over medium heat, lightly grease with oil. Spoon the dough 1/2 tbsp. at a time, forming small pancakes. Fry for 2-3 minutes on each side until golden brown.
  5. Transfer the pancakes to a serving plate. Serve warm with berries, honey or nuts.

Notes

  • After cooking, let the pancakes cool completely. Divide them into 5-6 portions – as many as you usually eat at one time. Wrap each portion in parchment or put it in a small zip-lock bag.
  • You can leave some in the refrigerator – they will easily stay fresh for 2-3 days. To do this, use an airtight container or bags. In the morning, just take out a portion and reheat it in a dry frying pan. They will become soft and aromatic again.
