  1. 2 whole grain hot dog buns
  2. 2 hot dog sausages (grill-safe)
  3. 2/3 cup corn (fresh, canned, or frozen)
  4. 2/3 cup shredded cheddar cheese
  5. 2-3 tablespoons tomato sauce
  6. 4 pickles
  7. salt and pepper
  8. optional: paprika, chili powder, lime juice

Instructions

  1. Split the hot dog buns in half, but not quite all the way through. Place them on a foil-lined baking sheet. Unwrap and spread with tomato sauce. Place sliced pickles inside.
  2. Grill the hot dog sausages until golden brown (about 5-7 minutes), turning occasionally. You can also use a skillet or oven. Place the hot dog sausages in the buns.
  3. Spray the skillet with oil and add the corn. Cook for 3 minutes, or until softened. Add the grated cheddar cheese and stir until completely melted. Season with salt, pepper, and spices to taste.
  4. Fill the buns with the cheese-corn mixture and top with grated cheese. Grill or bake until charred.
  5. Serve immediately, while the cheese corn is hot and chewy. If desired, garnish with lime or add a little jalapeño or hot sauce.
