Easy Rice Cooker Rice Pudding recipe idea. So simple, made with milk and served with some cinnamon and nuts for a delicious dessert.

Ingredients

  1. 1 liter (4 cups) full cream milk
  2. 1 vanilla bean stick (split and scrape the seeds off)
  3. 1 cinnamon stick
  4. 3/4 cup (165g ) medium grain white rice
  5. 1/3 cup (70g) of castor or fine sugar
  6. 1/2 teaspoon of ground cinnamon
  7. Nuts of choice

Instructions

  1. Soak the white rice for an hour or two first. It will be a little murky. Rinse and drain the water off and then add the 4 cups of milk as the liquid to the rice cooker. Add the split vanilla bean and a stick of cinnamon.
  2. Switch the rice cooker on and leave to cook for about 35 minutes. Do stir half way to make sure all is mixed in well. 
  3. Once the rice is cooked then remove the vanilla bean and cinnamon stick. 
  4. Add in the 1/3 cup of castor sugar and 1/2 teaspoon of ground cinnamon. Stir up well. Place lid on the cooker and leave on warm for another 15 minutes for it to set and cook finished.
  5. Serve the creamy pudding warm in a bowl for the family. Add some nuts or cocoa on top.
  6. A good idea to serve in pleasing decorative glass or dessert bowls for an attractive creamy fine dining dessert. Decorate with nuts of choice.

Notes

NOTE that the rice needs to soak first and then warm for another 15 mins. before serving.
