Ingredients

  1. 1 small carrot
  2. 1/4 cup finely chopped fresh herbs
  3. 2 sprigs thyme
  4. 3 oz ham
  5. 2 potatoes
  6. 1 egg
  7. 1 tbsp cornstarch
  8. Salt and pepper to taste
  9. Olive oil for frying

Instructions

1. Peel the potatoes from their skins, cut into circles. Boil in salted water or steam with a sprig of thyme for 25 minutes.

2. Peel and dice the carrots into small cubes. Place them in a bowl, add 3 tablespoons of water and cook in the microwave for 3 minutes.

3. Dice the ham.

4. Mashed potato the potatoes. Add salt, pepper and egg. Stir the potato dough with a spoon.

5. In a mixing bowl, combine the mashed potatoes, starch, chopped herbs, ham and carrots. Stir to combine.  The mixture should be thick and slightly sticky.

6. Divide the mixture into 8 equal parts. With damp hands, roll each part into a ball. Place the balls on a board greased with vegetable oil.

7. Heat a skillet over medium heat. Add a little olive oil or use cooking spray to lightly grease the surface. Place the items on the skillet. Fry the pancakes for 3-4 minutes until golden. Carefully flip the products with a spatula and cook for another 3-4 minutes on the other side.

Transfer them to a plate lined with paper towels to absorb excess oil. Serve these delicious potato fritters warm with sour cream or yogurt-based sauces. Enjoy!
