3/4cupall-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2cupgranulated sugar
1/2cupplain Greek yogurt
1/3cupvegetable oil or melted butter
2-3 large peaches
For the streusel.
2 tablespoons all-purpose flour
2 tablespoons sugar
1 1/2 tablespoons cold unsalted butter
1 teaspoon ground cinnamon.
Instructions
Preheat oven to 190°C (375°F). Score the peaches crosswise and blanch them with boiling water. Peel the peaches. Remove the pits and dice the peach flesh. Set aside 2 tablespoons of the fruit.
2. In a suitable bowl, combine the flour, baking powder, salt, and sugar. Add the vegetable oil and Greek yogurt.
3. Stir the ingredients until combined. Do not overmix. Stir in the peaches.
4. For the streusel, mix the flour, butter, sugar, and cinnamon with your fingertips until crumbly. Divide the batter evenly among the muffin tins, filling each about three-quarters full. Arrange the reserved peaches on top. Generously sprinkle the streusel over the tops.
Bake for 22–25 minutes. The tops will be golden brown, and a toothpick inserted into the center will come out clean.
Let the muffins cool in the pan for 5 minutes. Carefully transfer them to a plate.
