Ingredients

  1. 1 tbsp olive oil
  2. 8-10 frozen shrimp, raw, peeled & deveined (tails off)
  3. 1/4 tsp salt
  4. 1/4 tsp pepper
  5. 1/4 tsp chili powder
  6. 1 French baguette, sliced into desired sizes
  7. 1 container guacamole (or homemade)
  8. 1 green onion, chopped (optional for garnish)

Instructions

  1. First defrost the shrimp.
  2. Then add a little olive oil to a sauté pan over medium-high heat.
  3. Add in the defrosted shrimp, salt, pepper, and chili powder.
  4. Mix to combine and cook until shrimp turn pink.
  5. While the shrimp are cooking, turn the oven or broiler on.
  6. Add the sliced baguette to a baking sheet and toast for a few minutes,
  7. Remove from the oven, and carefully add a large spoonful of guacamole to each toast.
  8. Top with the hot seasoned shrimp and some chopped green onion for garnish.
