Corn and Black Bean Salad recipe with avocado and lime dressing. A healthy vegan or vegetarian cold side dish for braai or barbecue meals.

Ingredients

  1. 1/2 Cup of fresh lime juice.
  2. 1/2 cup of olive oil
  3. 1 garlic clove crushed
  4. 1 teaspoon of Himalayan salt
  5. 1/2 teaspoon of cayenne pepper
  6. 2 cans (15 oz ) of black beans
  7. 1 1/2 cups of frozen corn or Tin corn.
  8. 1 avocado peeled and diced into small pieces
  9. 2 cherry tomatoes chopped
  10. 6 green onions chopped small
  11. 1/2 cup of chopped fresh lettuce or parsley or cilantro (optional)

Instructions

  1. Place the lime juice olive oil salt and cayenne pepper in a shaker and shake until all is mixed.
  2. In a bowl add all the ingredients that  would of been chopped and sliced already and pour the lime juice mix over and toss altogether to mix the lime juice mixture with the bean salad.
  3. Serve in a glass bowl or with meals.
