Ingredients

  1. 1 lb (450 g) fresh green beans, trimmed and halved

  2. 5-6 slices bacon, cooked crisp and crumbled

  3. 1 1/2 cups (about 3 oz / 85 g) crispy fried onions (homemade, see below)
  4. 1 (10.5 oz / 300 g) can cream of mushroom soup (or homemade, see below)

  5. 1/2 cup (120 ml) milk

  6. 1 teaspoon soy sauce

  7. 1/2 teaspoon smoked paprika

  8. 1/4 teaspoon crushed red pepper flakes (adjust to taste)

  9. 1/2 teaspoon dried thyme (or 1 teaspoon fresh)

  10. 1 clove garlic, minced (or 1/2 tsp garlic powder)

  11. 1/4 teaspoon black pepper

  12. Salt, to taste

  13. 1 1/2 cups (about 3 oz / 85 g) crispy fried onions (French’s style)

  14. 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Bring a large pot of salted water to a boil, add beans, and cook for 4–5 minutes until bright green and tender-crisp. Drain and rinse under cold water.
  3. Fry or Sauté the in a skillet, cook bacon until crisp. Remove and crumble. 
  4. In a bowl, toss onion rings with flour, salt, and paprika until coated. Heat about ½ inch of oil in a skillet over medium-high heat. Fry the onions in batches for 2–3 minutes, or until golden and crisp. Drain on paper towels and cool before using in the casserole.

  5. In a large bowl, combine the cream of mushroom soup, milk, soy sauce, pepper, and half of the fried onions. Stir in cheese if using.
  6. Add the blanched beans to the mixture and toss until well coated.
  7. Pour into a 9×13-inch (or similar) casserole dish. Bake uncovered for 25 minutes.
  8. Sprinkle the remaining fried onions on top and bake another 5–10 minutes, until golden and bubbly.
  9. Add your chopped parsley leaves on top as a garnish and serve warm.

Notes

  • Optional Homemade Sauce (instead of canned soup)

    • 2 tbsp butter

    • 2 tbsp flour

    • ¾ cup milk

    • ½ cup chicken or vegetable broth

    • ½ cup finely chopped mushrooms

    • Salt & pepper to taste

    Melt butter, sauté mushrooms 3–4 minutes, stir in flour, whisk in milk and broth, and simmer until thickened, then use in the recipe.

  • Homemade Crispy Fried Onions (optional)

    • 1 medium onion, thinly sliced into rings

    • ½ cup all-purpose flour

    • ½ teaspoon salt

    • ¼ teaspoon paprika (optional)

    • Oil, for frying
