Warm up with this Comforting Beef and Vegetable Curry Stew, made with tender meat chunks, herbs and spices, rich and flavorful roast.

Ingredients

  1. 450 g(1 Lb)beef, like chuck roast, cut into small chunks.
  2. 2 Med Onion, sliced and chopped
  3. 2 celery stalks, chopped
  4. 2 Tbsp. Olive oil
  5. 2 ginger pieces, about 2 inches, chopped and diced
  6. 3 cloves of garlic, chopped finely
  7. 2 Tablespoons of curry powder
  8. 2 Tablespoons of coriander
  9. 1 teaspoon of turmeric powder
  10. 1 cup Carrots, sliced
  11. 2 cups Potatoes, cut into edible pieces
  12. 2 apples peeled and cored and chopped
  13. 2 parsnips, peeled and chopped
  14. 1 zucchini, sliced
  15. 1 cup of raisins
  16. To taste Salt, Pepper
  17. splash of Worcestershire sauce

Instructions

  1. Preheat the oven to 175 deg. C (350 deg. F) Prepare a roasting pan.
  2. Boil meat on the stovetop in some water until tender. Simmer for about 30 minutes.
  3. In another large pot, add olive oil, over medium heat, add in the onions, celery, and garlic. Stir often and cook them till tender. Stir in the curry powder, coriander and turmeric powders, and mix well. Until all in coated for about five minutes.
  4. Add in your vegetables, potatoes, zucchini, apples and parsnips, and raisins.
  5. Stir in the beef and the cooking liquid that had onions and spices. 
  6. Pour the beef and vegetable mixture into the roasting pan and add over the vegetables 1/2-3/4 cup of water. Cover the roasting pan with aluminum foil and roast until the beef and vegetables are tender.
  7. Roast for about an hour.
  8. Serve in a dish or a large bowl for dinner on the table for all to help themselves.

Notes

  • Use 1 teaspoon of steak seasoning, (Canadian blend)
  • If desired you can add nuts, such as cashews or other.
  • serve with rice
