Ingredients

  1. 4 pieces of pork fillet
  2. 12 strips of bacon
  3. 56 mushrooms
  4. 14 pitted olives
  5. 1 onion
  6. 12 tbsp. olive oil
  7. 1/2 tsp. each of paprika, black pepper, mixed pepper, dry garlic
  8. salt to taste

Instructions

1. First, prepare the stuffing. Pat the mushrooms dry with a damp cloth and chop finely. Peel the onions, cut into rings. Set aside 4 onion rings of medium size. Chop the rest of the onion. Set aside 4 olives, cut the rest into 4 pieces. Fry the onions and mushrooms in olive oil until golden. Add the olives at the end of cooking. Allow the filling to cool.

2. Place the bacon crosswise on the board.

3. Baste the fillets, paying special attention to the edges – they should be thin. Salt the meat and sprinkle with spices. Place the pork in the center.

4. Place a tablespoon of stuffing on the pork.

5. Pinch the edges of the fillets together, wrap in bacon and secure with an onion ring. If it is difficult to put the fillets together, you can fix them with toothpicks. Place an olive on top. Similarly form the rest of the fillets.

6. Place the prepared sacks in an oiled baking dish.  Bake in a hot 392°F oven for about 45 minutes until golden.

Transfer the treats to a plate to serve. Garnish with olives and cilantro leaves. The dish can be served as a stand-alone dish or topped with a side of vegetables. Enjoy!
