Ingredients

  1. 1 chicken breast
  2. 10 slices bacon
  3. 1-2 sprigs rosemary
  4. 1 tablespoon butter
  5. 2 teaspoons brown sugar
  6. 1/2 teaspoon paprika
  7. 1/2 teaspoon coriander
  8. 1/2 teaspoon black pepper
  9. salt to taste.

Instructions

  1. Cut the chicken breast in half lengthwise and place on a cutting board. Cover the board with cling film and beat gently (the fillet is very tender).
  2. Place 5 slices of bacon on the board, overlapping them.
  3. Place half of the chicken fillet on top of the bacon. Season with salt and spices.
  4. Roll the bacon and fillet into a roll. Use a sharp knife to cut into finger-thick slices. Shape the other half of the fillet and bacon slices in the same way.
  5. Thread three slices per serving onto a skewer. Melt the butter in a microwave and mix it with brown sugar until completely melted. Brush the chicken pieces with the glaze on all sides. Sprinkle them with rosemary. Transfer the skewers to foil and bake in the oven at 200°C (400°F) for about 30 minutes.
  6. You can turn the skewers over after 15 minutes, and at the end, turn on the broiler/grill for 2-3 minutes to crusts.
  7. The finished dish can be served on a board with onions, rosemary, and lemon wedges. Enjoy!
