Light and fruity! A Summer Berry Salad with tapioca pearls and honey dressing is the perfect refreshing recipe for picnics, brunch.

Ingredients

Fruit:

  1. 1 cup of cut watermelon
  2. 1 fresh ripe peach
  3. 1 cup of strawberries
  4. 1/2 cup of blueberries
  5. 1/2 cup of blackberries
  6. 1/2 cup tapioca peals

Dressing

  1. zest of one lime
  2. 1 1/2 tablespoons lime juice
  3. 2 tablespoons pure organic honey

Instructions

  1. Peel the watermelon, cut into edible pieces. Wash and clean the strawberries, blueberries, and blackberries. Slice the ripe fresh peach into thin slices.
  2. Cook on the stove top the boba pearls with brown sugar to get the dark color. (as per instructions on the package) leave to cool with a little syrup. As they will stick together.
  3. Mix your dressing until all is dissolved. 
  4. In a large bowl mix all the fruit together and leave some tapioca for the topping. Serve in some bowls for dessert. Sprinkle more tapioca pearls on top for an effect.
  5. Drizzle each bowl with the honey, lemon juice. 
  6. Dress the bowl with a fresh sprig of mint and serve. Eat this salad within four hours. 

Notes

  • The tapioca pearls should not be refrigerated, as they will harden. 
  • They may stick together but you could leave some of the sugar syrup with them.
  • Alternatively you can just drizzle honey for a dressing.
  • Add vanilla ice cream or whipped cream to go with this summer fresh salad.
  • Yogurt or maple syrup can be used as a dressing.
