Strawberry Watermelon Feta Salad recipe idea for a refreshing and easy cold side dish for summer that is sweet and salty with a dressing.

Ingredients

Units Scale
  • 4 cups of watermelon cut into cubes or pieces (peeled and pips taken out)
  • 3 cups of fresh strawberries. (sliced in half)
  • 1 fresh ripe cucumber, sliced. (washed, skin left on or peeled)
  • 3/4 cup of goat feta cheese, broken up or in cubes.
  • 1 teaspoon of salt
  • 1/4 cup of fresh clean mint leaves.

Dressing

  • 1 tablespoon of olive oil
  • 1 lime juiced
  • 1 tablespoon of honey

Garnish

A few fresh mint leaves

 

 

Instructions

  1. Clean, cut and take out seeds or pips in the watermelon, and the cucumber. Peel the watermelon and cut into cubes or bitable pieces. Optional to leave the cucumber skin on. Slice thinly and cut into quarters. Clean and take out leaves of the strawberries. Cut into halves or quarters, depends on the size.
  2. In a large bowl, add all the watermelon and cucumbers and strawberries, The finely cut up mint leaves and toss all gently together.
  3. Take a smaller bowl to mix the dressing in. The olive oil, juice of one lemon or lime, and some honey as a  sweetener. Combine all together.
  4. Pour the dressing over the fruit and toss well until all are covered. Season with salt to bring out the flavors. Toss lightly again.
  5. Serve in a salad bowl garnished with mint leaves for a cold side dish or summer light fruit salad.
