These Puff Pastry Love Letter Pastries are filled with ruby red cranberry jam and baked until golden. Cute, easy, and perfect for Valentine’s Day or gifting.

  1. 11 ounces’ puff pastry
  2. 6 teaspoons cranberry jam
  3. 1/2 tablespoon freezer sugar
  4. 1 egg

Instructions

  1. Preheat oven to 200 deg. C (392 deg. F)
  2.  Transfer the completely thawed dough to a floured board and roll out to a thickness of 1/10 inch. Using a 4 x 4-inch square cookie cutter, shape the base. You will have 6 squares.
  3. Form small hearts with the remaining dough.
  4. Use the back of a knife to create decorative stripes. Place 1 teaspoon cranberry jam in the center of each square. Fold the opposite corners toward the center, overlapping each other, to form an envelope. Carefully pinch the closure to prevent it from opening during baking. Separate the egg white and yolk. Brush the hearts with egg white and secure them to the letter. Add a Valentine’s Day card if desired.

  5. Place the finished letters on a parchment-lined baking sheet and bake in the oven at 392°F for about 18 minutes. Cool the letters on a wire rack and serve with raspberry lemonade or cold milk. Enjoy!
