New Year’s Fruit Cake Trifle made with layers of leftover Christmas cake. A simple, no bake dessert perfect for celebrations.

Ingredients

Units Scale
  1. Fruit cake squares (from Christmas cake)
  2. Custard (box bought or freshly made 500ml)
  3. 500 ml full cream
  4. 500 g dark chocolate
  5. jellies...(red, green and yellow)1 box each made according to the instructions.
  6. Tin of caramel
  7. a few cherries (fresh or glazed)
Whipped cream cheese and cream. 
  1. 1/2 cup (120 ml) cold whipping cream

  2. 1/4 cup (60 g) cream cheese, softened

  3. 2 tablespoons powdered (icing) sugar

  4. 1/2 teaspoon vanilla extract (optional)

Instructions

  1. At the bottom is a layer dark chocolate ganache. Heat the cream until just steaming (don’t boil), pour over the chopped chocolate, let sit 2–3 minutes, then stir until glossy and smooth. Let it cool slightly before layering so it doesn’t melt the custard or cream layers.
  2. Then cut cubes of Christmas cake loosely pack on top of the ganache. evenly.
  3. Then cubes of red, green and yellow jellies.(made the day before to set)
  4. Then dollops of caramels in between the blocks of jellies.
  5. Then I drizzled some Ultramel custard over the jellies and dollops of caramel.
  6. On top of the custard have put a mixture of cream and cream cheese. (see ingredients)
  7. This will give you a lightly sweet, smooth cream that’s easy to spread or pipe between trifle layers.
  8. Then I spread some more chocolate ganache over the cream.
  9. Then layer some more Christmas cake cubes
  10. Some more jellies.
  11. More custard and on top the cream and caramel rosettes with some chocolate ganache. Drizzle chocolate for decoration.
  12. Topped with a few fresh cherries. (or glazed)
