  1. 4 eggs
  2. 1 large potato
  3. 2 tablespoons chopped purple onion
  4. 1-2 tablespoons chopped bell pepper
  5. 3-4 tablespoons vegetable oil
  6. Salt and pepper

Instructions

  1. Wash the potatoes under running water. Cut into 1/8-inch-thick slices. Place the slices in a bowl and rinse with water to remove excess starch. Pat dry with a towel.
  2. Heat the vegetable oil in a frying pan. Place the potato slices in a single layer and fry until golden brown on both sides. Transfer the cooked slices to a paper towel.
  3. Use a ceramic baking dish. Grease it with oil and arrange the potato slices in layers. Season the potatoes with salt and pepper.
  4. Beat the eggs and salt in a bowl. Add the onion and bell pepper. Pour the egg-vegetable mixture over the potatoes and bake in the oven at 180 deg. C (356 deg. F) for about 20 minutes. The tortilla should be set and golden brown on top.
  5. Slice the finished dish and serve warm with sour cream. The tortilla is also delicious after cooling.

Notes

  • Add flavor and sprinkle the tortilla with grated Manchego, Cheddar, or Gouda.
  • You can add cooked vegetables to the egg mixture for a healthier option.
  • For a heartier version, add chorizo, ham, chicken, or turkey.
