Ingredients

Units Scale
  1. 1/2 pound shredded cheddar
  2. 2 tsp instant yeast
  3. 3 cups flour
  4. 1 1/2 cups warm water
  5. 1 1/3 teaspoons salt
  6. 2 teaspoons sugar
  7. 1 tablespoon olive oil.

Instructions

  1. Place the flour, salt, sugar, and yeast in a bowl. Mix with a dry whisk. Add the oil and water. Stir with the back of a silicone spatula until the flour disappears. You will have a sticky dough. Cover the bowl with plastic wrap and let it rise for 1 1/2 hours in a warm, draft-free place. During this time, the dough should double in size.
  2. Dust a pastry board with flour. Stretch the dough out onto the board. Place 2/3 of the cheese on the dough and spread it evenly over the surface.
  3. Roll the dough into a roll along the short edge. Pinch the seam.
  4. Turn the oven on and preheat to 450 deg. F. (230 deg. C). Grease the bottom and sides of a rectangular loaf pan with butter. Place the dough in the pan, cheese side down. Cover the pan with plastic wrap and let rise for 30 minutes. Remove the wrap. Sprinkle the roll with cheese. Bake the bread in the oven for 20 minutes. Reduce the temperature to 400 degrees and bake for 20-25 minutes. Cool the bread in the pan for 7 minutes and remove it from the pan. Slice the bread after 5 minutes and serve.

It’s best served warm, when the crust is still crisp and the cheese inside is soft and chewy. Before serving, drizzle the crust lightly with olive oil or melted garlic-herb butter for added flavor.
