Crust
- 1 1/2 cups all purpose flour
- 5 tbsp cornstarch
- 1/3 tsp salt
- 1/2 cup powdered sugar
- 1 cup cold cubed butter
Filling
- 3 eggs
- 1 cup sugar
- 2 lemons
- 3 tbsp all purpose flour
Instructions
- Preheat the oven to 180 deg. C (350 deg. F.)Combine all purpose flour, corn flour, salt, powdered sugar and cubes of butter. It’s convenient to mix everything in a blender. You can also knead the butter and flour into crumbs with your hands.
- Cover a 9 x 13 baking dish with foil and place the crumbs in it. Level and make small borders (about 1/2 inch). Bake for 20 minutes in the oven.
- Zest two lemons and squeeze out the juice. Mix eggs, zest, lemon juice, sugar, all-purpose flour.
- Mix the ingredients for the filling thoroughly with a whisk so that there are no lumps of flour.
- Pour the filling into the baking dish and place back in the oven. For a softer filling, bake for 20 minutes; for a denser filling, bake for 30 minutes.
- Remove the finished lemon bars from the oven and let cool for about 2 hours.
- After two hours, the lemon bars will become denser and easier to cut.
- Dust the lemon bars with powdered sugar and cut into squares or rectangular pieces.
