Ingredients

Units Scale
  1. 1 lettuce head or a bag of mixed greens
  2. 2- 3 large fresh ripe peaches, sliced
  3. about 100 grams or 4 oz of feta goat cheese
  4. 3/4 cup of pecan nuts
  5. 1/2 a red onion, sliced and halved

Dressing

  1. 8 Tablespoons of olive oil
  2. 4 Tablespoons of apple cider vinegar
  3. 2 teaspoons of organic natural honey, or a nice drizzle
  4. 1 teaspoon of ground black pepper

Instructions

Rinse the lettuce leaves, wash the peaches. Set the lettuce leaves aside in a clean bowl.

Slice the peaches with the skins on. Break up your feta to large crumbs, and slice and separate the red onion.

Whisk together the dressing mixture until all in combined. Olive oil, vinegar, honey and black pepper.

Add some of the dressing to the lettuce leaves, and toss in the fresh sliced ripe peaches and onion slices, feta crumbs and pecan nuts. Add the remainder of the dressing to this tossed salad and serve.
