Ingredients

2 ripe fresh pears, washed and thinly sliced with skins on.
2cups of arugula leaves (30 oz)washed and patted dry.(pick just before making salad)
3/4cup of walnuts
Dressing
3/4cup of virgin olive oil
2 Tablespoons of maple syrup or honey
1 teaspoon of Dijon mustard
2 Tablespoons of Balsamic binger
1 Tablespoon of fresh lemon juice
pinch of salt and ground black pepper
Instructions
Make the dressing in a bowl or jug. By adding your maple syrup, mustard, balsamic vinegar lemon juice and salt and pepper. Whisk until all is combined, then while whisking gradually add your olive oil in and whisk again. (hand whisker will do the job)
After you have washed your fresh arugula leaves, pat them dry, and place them in a bowl. Add in most of your dressing and toss until all of them are coated.
Place leaves in a salad bowl to serve. Add the pears, and walnuts, and toss lightly then drizzle a little dressing over the pears, and serve in the center of the table for all to help themselves.
This salad makes a delicious seasonal fall or autumn recipe for family meals.
Notes
So add to this salad break up some feta cheese and sprinkle over the salad.
