Easy, cheesy homemade meatloaf  recipe with simple ingredients and a sweet tangy glaze, tender, flavorful, and perfect for weeknight dinners.

Ingredients

  1. 1 1/2 pounds ground beef

  2. 1 large egg

  3. 1 onion, finely chopped

  4. 1-1 1/2 teaspoons garlic powder
  5. 1/2-1 teaspoon dried thyme or oregano
  6. 1/2-1 teaspoon smoked paprika
  7. 1 cup milk

  8. 1 cup dried bread crumbs

  9. 1 cup shredded cheddar cheese (or a blend)

  10. Salt and black pepper, to taste

For the Sauce/Glaze

  1. 1/3 cup ketchup

  2. 2 tablespoons brown sugar

  3. 2 tablespoons prepared mustard

  4. 1-2 tablespoons Worcestershire sauce (optional but highly recommended)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper.

  2. Mix the Meatloaf Base. In a large mixing bowl, combine the ground beef, egg, chopped onion, garlic powder and oregano, paprika, milk, bread crumbs, shredded cheese, salt, and black pepper.
    Mix gently with clean hands or a fork until everything is evenly combined. Avoid overmixing to keep the meatloaf tender.

  3. Shape the Meatloaf. Transfer the mixture to the prepared greased or lined loaf pan. Press lightly to shape it into an even loaf.

  4. Make the Sauce/Glaze. In a small bowl, whisk together the ketchup, brown sugar, prepared mustard, and Worcestershire sauce (if using).

  5. Add the First Layer of Glaze. Spread about half of the glaze evenly over the top of the meatloaf.

  6. Bake for 45 minutes, then remove from the oven and brush with the remaining glaze.

  7. Finish Baking. Return to the oven and bake for an additional 15–20 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).

  8. Rest and Slice. Let the meatloaf rest for 10 minutes before slicing. This helps it set and makes it easier to cut.

Notes

  • Serve this cheesy meatloaf with mashed potatoes, roasted veggies, buttered corn, or a crisp garden salad. It’s also fantastic sliced in sandwiches the next day.
