4-6mediumpeaches (weight them after peeled and pitted.) 1 1/2 lbs.
2 1/2cups, 600ml. of brown or white sugar (brown sugar will darken the jam)
1 lemons juice
Instructions
Clean and peel the peaches and take out the pips. Cut into pieces to boil.
On medium heat on the stove top, warm up a pot with the sliced peaches and the lemon juice. Using a potato masher to break up the peaches once they start getting softer. Until a good mixture.
Add sugar to this mixture, and bring the stove temperature to higher. Bring to boil, stirring consistently. Stir until peaches are reduced, and the jam sticks to the spoon then you have reached the desired consistency. (15-20 minutes)
Leave to cool. If you find the jam has not reached the desired consistency then place back on the stove and boil for another 5-10 minutes until thicker.
Notes
The amount of the jam will differ to the sizes and juiciness of the peaches used.
Not the right consistency, then bring back to boil until it is.
Lemon juice is high in pectin, and helps set the jam.
To little sugar will not set the jam, rather add more as you heat it up to the right consistency.
