Delicious easy ground beef and Potato casserole with veggies, bacon, and creamy white sauce. Comforting, and perfect for weeknights.

3 medium potatoes (peeled and sliced)
200grams of bacon bits
400grams of ground beef (mince)
1 1/2cups of mixed vegetables of choice. (used peas, butternut)
1 red onion, chopped up.
1 Tablespoon of melted butter
2 Tablespoons of flour or corn starch
2 1/2cups of milk
1 teaspoon each of salt and pepper
1 teaspoon of garlic flakes
1 teaspoon of steak seasoning
1 teaspoon of dried oregano herbs
Instructions
Preheat the oven to 180 deg. C (356 deg. F)
Obtain your casserole dish. set aside.
Peel and slice your potatoes, and cut up your onion into small pieces.
In a saucepan, melt your butter and add in the flour, to a paste. Stir quickly to mix it well, then add 2 1/2 cups of milk and stir this mixture until smooth and thick.
Sauté your ground beef and bacon bits together, salt and pepper and add garlic flakes, until just lightly cooked. Cooking them first will bring out the flavors.
Place some of the milk paste in the bottom of the casserole dish.
Layer your sliced potatoes in this mixture, until it is all used up. Maybe about 2 layers. Sprinkle salt and pepper over the potatoes.
In a bowl add your cooked ground beef mix, add in the onion and the vegetables, and salt and pepper, with oregano herbs with some steak seasoning.
Place the meat and veggie mixture over the uncooked potatoes, and add more dried herbs.(if you prefer)
Pour the milk paste over the ground beef, mixture. This will soak to the bottom of the dish.
Place this full meal casserole dish in the heated oven and bake until the meat and liquid has been absorbed. Should take about 30-40 minutes. This will depend on the size of your dish.
The potatoes should be tender and cooked, and the ground beef and bacon with veggies will be crispy and golden. Full of flavor.
