Ingredients

  1. 1/4 cup frozen green peas
  2. 4-5 tablespoons corn
  3. 1/2 cup leek rings
  4. 1/3 carrot
  5. 1 bell pepper
  6. 2/3 cup alphabet pasta
  7. 1 tablespoon tomato sauce
  8. 1/2 tablespoon granulated garlic
  9. 7 cups vegetable broth
  10. 1 bay leaf
  11. 2 allspice berries
  12. Salt and pepper to taste
  13. 2 tablespoons olive oil
  14. Fresh dill and parsley for serving
 

Instructions

  1. Seed and core the bell pepper and dice. Thinly slice the leek. Dice the carrots. Pour the oil into a non-stick pan and heat over medium heat. Add the vegetables and sauté until translucent, about 5 minutes.
  2. Once the vegetables are sautéed, pour in the vegetable broth. Bring to a boil and add the peas. Simmer for 3 minutes.
  3. Add the corn. Stir well to combine all the ingredients.
  4. Add the tomato sauce, bay leaf, allspice, and garlic powder. Cook for about 4 minutes.
  5. Add the pasta. Continue cooking for 10 minutes, until the pasta is cooked al dente and the flavors are combined.
  6. Remove the bay leaf and adjust the salt. Serve the vegetable soup hot, garnished with fresh herbs. Serve with vegetable waffles or fresh bread.
