Delicious Homemade Peach Cobbler Recipe made with fresh fruit and baked in two small oven dishes. A simple, comforting dessert perfect for summer.

Ingredients

Filling

  1. 3 fresh peaches (2-3 cups sliced or cubed) (optional to use canned peaches)
  2. 1/4 cup of brown sugar
  3. 1 teaspoon of lemon juice
  4. 1/4 teaspoon of salt
  5. 1/2 teaspoon of corn starch

Batter

  1. 4 Tablespoons 118 g (4 oz) of unsalted butter (cold)
  2. 1 cup of all purpose flour
  3. 1/4 cup of fine white sugar
  4. 1 1/2 teaspoons of baking powder
  5. 1 teaspoon of cinnamon
  6. 1/4 teaspoon of salt
  7. 1/4 cup of milk
  8. 1 1/2 teaspoons of lemon juice

Serve with whipped cream or vanilla ice cream for a warm dessert.

Instructions

  1. Preheat the oven to 180Deg C. (350 Deg. F)
  2. Grease or use spray and cook in the 2 (5 x 5 inch approximately) oven proof dishes. (or what ever sizes you have) Just halved the ingredients and shared it.
  3. Clean, remove pips and cut peaches into pieces or cubes. (may use canned peaches, then skip step 3-4)
  4. Mix the cut peaches in a bowl with the sugar, corn starch, lemon juice and the salt. Mix until all is coated. Place cut peaches mix in the two oven dishes equally and bake in oven for about 10 minutes, until sugar melts. (if using canned peaches then skip this step) Take out of the oven.
  5. In a bowl combine the dry ingredients, (flour, baking powder, cinnamon, salt, sugar)
  6. Add the dry mixture in a blender, add in the butter that is cut into pieces and pulse blend, until it is course mixture. OR mix by hand.
  7. Place the dry mixture in a bowl. Combine the dry mixture with the milk and combine. The dough mix should be slightly sticky. If to dry add a little more milk. Dived the batter in half.
  8. The Batter should be placed evenly on top of the caramalized peaches of each dish.
  9. It is optional to add a mix of cinnamon and brown or white sugar mix to the topping.
  10. Bake in the oven for 30-40 minutes until brown. Test if the top is baked by inserting a toothpick or a clean knife, if it comes out clean its baked. (Because the ingredients are halved watch that the baking time, is not to long.)
  11. Serve with whipped cream or vanilla ice cream on top of the slices.
