1. 1 pound (450 g) steak or beef tenderloin
2. 1/2 orange bell pepper
3. 1/2 yellow bell pepper
4. 1 onion
5. 4-6 cherry tomatoes
6. 2 tablespoons finely chopped chili pepper
7. 1 1/2 tablespoons apple cider vinegar
8. 1/4 teaspoon black pepper (to taste)
9. pinch salt
10. pinch sugar
11. 1 teaspoon granulated garlic
12. 1 teaspoon paprika
13. 1/2 teaspoon coriander
14. 2 allspice peas
15. 1 bay leaf
16. 1/4 cup (60 ml) water or broth
17. oil for frying

Instructions

1. Grill the beef in a skillet with a little oil until lightly browned, 2-3 minutes. This adds flavor, but you can skip this step. Slice the meat into thin strips.Peel and finely chop the onion. Fry it in a slow cooker on HIGH without a lid until lightly browned.
2. Put in the meat, spices, salt, sugar, pepper, chopped tomatoes and chili. Add water, vinegar and cook on LOW for 2 hours under a lid until the meat is soft.
3. Peel the peppers, cut into strips and put in a slow cooker. Add bay leaf and allspice and cook for 40 minutes.
15 minutes before the end of cooking, if desired, thicken the sauce: mix 1 tsp starch with 1 tbsp. water, pour into the slow cooker, stir gently and cook until thickened. We did not thicken the sauce.
Serve hot with white or brown rice, rice noodles, mashed potatoes or steamed vegetables.
