Cozy up with this creamy pumpkin pasta with chicken and tagliatelle in a rich pumpkin sauce. A perfect fall dinner full of comfort and flavor.

Ingredients

Units Scale
  1. 1 Large packet of tagliatelle pasta (1.1 Lb, or 500 g per packet)
  2. 1 Tablespoon of olive oil
  3. 1 (1 cup)medium red onion (chopped)
  4. 3 (1 Tblsp )cloves of garlic (crushed, grated)
  5. 1 can of pumpkin puree
  6. 1 cup of cooked or uncooked small, pumpkin pieces to add more color and flavor.
  7. 1 cup of chicken broth
  8. 3/4 cup of full cream (or half and half of milk)
  9. 1/2 cup of grated parmesan cheese
  10. 1 Tablespoon minced cut fresh parsley leaves. (1 teaspoon of dried parsley)
  11. 1/2 teaspoon of fresh finely chopped rosemary (1/4 teaspoon of dried rosemary)
  12. 1/4 teaspoon of ground nutmeg
  13. 1/4 teaspoon of salt (Himalayan)
  14. 1/4 teaspoon of ground black pepper
  15. 2 cups of shredded left over chicken. (or bought rotisserie chicken)
  16. Garnish with fresh or dried herbs, basil leaf, and more parmesan cheese.

Instructions

  1. In a large pot add water to cover the pasta and add a generous amount of salt, boil the tagliatelle pasta until done. Should take about 8-10 minutes. (get instructions from the package) While this is cooking start your flavors and spices.
  2. In a medium heated skillet pan, add your olive oil and add your chopped up onions. Sauté these until tender which should take about4-5 minutes. Then include your garlic and stir to mix up well and to cook.
  3. Then add the pumpkin puree, pumpkin pieces, cream, broth, parmesan cheese, your herbs, parsley and rosemary, and nutmeg. Add in your salt and pepper. Stir the source now and again, and bring it up to being heated through.
  4. Add in your drained pasta and cut up chicken pieces. Bring this sauce and ingredient to be heated through. Add your lid to cover and switch off the stove. Only needs to be all heated through.
  5. Check on the taste of the pasta bowl, if needed add more salt and pepper.
  6. Serve in individual plates and garnish with herbs of parsley or basil leaves, and sprinkle parmesan cheese over and serve hot for a delicious fall or winter cozy dinner.

Notes

  • Vegetarian option – omit the chicken and use vegetable broth.
  • add left over turkey or cut up sausage or other meats.
  • Any pasta type will suite this recipe, spaghetti or penne, and more.
  • Additional veggies to add to the source when adding your meat or not, spinach or kale.
