Ingredients

  1. 3cups chicken, cooked and chopped
  2. 1 – can brown (baked) or black beans, drain and rinse the beans
  3. 1 – can corn, drained
  4. 3 – medium green onions, chopped (or red)
  5. 1 – red bell pepper, chopped
  6. 1 – green bell pepper, chopped
  7. 1 – head of lettuce, shredded
  8. 1cup cheddar cheese, (blocks for shredded)
  9. 1cup salsa, mild or hot – your choice
  10. 1/4cup cilantro, or parsley chopped
  11. 1cup ranch dressing
  12. 2 boiled eggs

Instructions

  1. In a very large bowl, put the chicken, black beans, corn, onions, red and green pepper, lettuce, boiled egg and cheese.
  2. Toss and mix it all together.
  3. In another bowl, mix the salsa, ranch dressing, and salsa together, or mayonnaise and yogurt mixed.
  4. Pour the mixture over the salad and mix it up to coat the salad.
  5. Sprinkle with hemp or sesame seeds.
  6. Put into the fridge until time to serve.
